Recipe of the Season: Roasted Pumpkin Seeds

With Fall here and Halloween approaching, I want to share one of my favorite seasonal recipes.  I included this recipe in my book Wellness Wisdom, where I highlight the many healing properties of pumpkin seeds.  Enjoy!

Roasted Pumpkin Seeds


Pumpkin seeds
Olive oil
Sea salt
Possible spices: cayenne pepper, thyme, pepper, tamari, garlic, turmeric, cajun spice, and chili powder

Preheat the oven to 300 degrees F.  Toss the pumpkin seeds with oil and dust with sea salt and desired spices.  Place on a cookie sheet and roast for about 30 minutes – turning occasionally.  Alternatively, place the pumpkin seeds on the cookie sheet first and then add the oil and spices on top.

Note: I do not usually advocate eating spicy foods, but every once in a while it is fun to have a change, especially if it is with something as healthy as pumpkin seeds.
