A friend of mine shared a great idea for keeping ginger root fresh. If you have worked with this root before, you know that it can become dried and withered quickly. If we are spending the money for organic foods, we want to be able to use what we purchase.
To prolong ginger’s shelf life peel the skin off the root and then cut the flesh into small pieces, the approximate size that you would use for cooking. Lay these pieces on a flat surface in the freezer, so they are not touching each other, just until frozen. Then place them in a freezer bag and store in the freezer. Freezing the ginger before storing keeps the pieces from becoming stuck to each other, so you can easily access the amount you need for cooking.
